Let us chill out with ice cream!!

Rose & Almond Ice cream - pleasing to the eye besides palette!!

To one part of the basic ice cream, add;

1 drop each of rose & almond essences

¼ cup of roasted almonds, chopped

few rose petals.

Whisk well & freeze as usual.

 

Son Papdi Ice cream - I make it crunchy!!

Use a part of the basic ice cream recipe. After the second whisking, fold in gently 1 tbsp of slightly crushed sonpapdi per cup of mixture & freeze.
When serving, top with the other half of son papdi, coarsely chopped.
I did not add any flavouring agent.

 

Melon Ice cream --use any pulpy melon.

I used musk melon, locally called Kiruni.

Do not use water melon.

Mince the yelow pulp, add powdered sugar & add after whisking the second time. Add a few drops of vanilla essence.

Add in moderation - otherwise, it will not set.

 

Gulabhi Ice cream - more scented than flavoured!! To the basic ice cream, add st

To the basic ice cream, add store-bought gulkhand & little rose syrup.

After second whisking,add in moderation (not more than 2 tbsp) & fold in well.

Serve with rose syrup drizzled over it.

 

Apple-Cinnamon Ice cream - classic combo!

To the basic mixture, ater second wisking, add finely grated apple + powdered sugar to taste. Make sure to add in moderation, without diluting the basic mixture. Add little cinnamon powder & fold in well.

Freeze & serve with a dash of cinnamon powder, sprinkled on it.

 

SSapota (chikoo) Ice cream - a fruit one!

Coarsely chop ( do not blend) 2-3 fruits & add after the second whisking with a little powdered sugar.

Fold in & freeze.

No essence i necessary.

 

Avocado Ice cream - very easy to make

Select ripe avocado fruit & remove the pulp.

Whisk together:

Pulp - ½ cup

Milk - 1 cup

Milk powder - 3 tbsp

Cream - 3 tbsp

Sugar - 6 tbsp.

Freeze for 5-6 hrs.

Remove, whisk well as for basic ice cream & freeze again.

 

White-Chip Chocolate Ice cream

Cut white chocolate into tiny pieces & add to the chocolate ice cream after second whisking.

Do not beat, just fold in.

Serve with extra grated white chocolate.

Choco-Banana Ice cream with Caramel Ribbon.

Make chocolate ice cream & add 2 tbsp finely chopped ripe bananas, before the second freezing.
Serve with extra slices of banana + a thin stream of caramel sauce.
