    Custard Jam Biscuits (1) - a lovely biscuit!

    Butter –65 grams
    Custard Powder ( Vanilla or Pineapple) – 50 grams
    Maida – 75 grams
    Sugar – 60 grams
    Vanilla – ½ tsp
    Egg - ½ egg (can use replacement)
    Apricot Jam – To sandwich
    Cream butter and sugar till smooth. Add essence.
    Stir in flour and custard powder.
    Beat the egg well in a separate bowl, and add ½ of the mixture into the dough. The egg mix has to be a through mix of white and yolk.
    Stir well to make dough. Wrap in butter paper and chill for 30-45 mins or till firm
    Roll on a butter paper, and cut into shapes with a round cutter.
    Bake in a ungreased sheet at 180 degrees for 15-17 mins.
    Let to cool on a wire rack.
    Sandwich with jam.

    Spicy Masala Biscuits - ideal to serve with tea.

    Mince together:

    Green chillies + ginger + coriander leaves +curry leaves - to taste

    Knead with


    Maida - 2 cups

    Cooking soda - ½ tsp

    Butter - ½ cup

    Salt

    Powdered sugar - 3 tbsp

    Curds - 3 tbsp (about)

    Knead to a stiff dough to get crisp biscuits.

    Take balls, roll into chappathis, cut with a biscuit cutter.

    Bake at 180 deg C for 15-20 mts.

    Makes 5 dozs.

    Pizza Muffins - Delicious for a snack!!

    I made this without onions & capsicum. Hence they are not shown in the photo.

    Mix together:

    Chopped tomatoes & capsicum - 2 tbsp, each

    Chopped onions - 2 tbsp

    Grated cheese - 4 tbsp

    Chilli flakes - ½ tsp

    Oregano - 1 tsp

    Salt

    Tomato ketchup - 2 tbsp

    Olive oil - 2 tsp

    For the dough:

    Maida & wheat flour - 100 gms each

    Baking powder - 1 tsp

    Cooking soda - ½ tsp

    Salt

    Olive oil - 2 tbsp

    Mix both together adding enough water to get a dough of dropping consistency.

    Fill in greased muffin cups & bake in a pre heated oven at 180 C for 12-15 mtes.

    Mamoul - the famous cookies of the middle east!

    I happened to buy a plasic mould in Poppat Jamal, because the design was so attractively moulded in good quality plastic. I thought, I would try Purana Kozukkatai with it!! But now I seem to be using it for so many recipes!!

    The literature behind the carton was in French! So, I googled & got to know about mamoul!!
    I tried the following recipe more because there was less sugar and the filling was made with walnut, which, right now, I have stock of!!
    Rose water gives a pleasant, refreshing flavor!

    Knead to a dough:

    350 g very fine semolina (I used chiroti rava)

    40 g plain flour

    40g sugar

    1/4 teaspoon baking powder

    150 g butter, at room temperature

    3 to 4 tablespoons rose water

    For filling, mix:

    150 g walnuts, coarsely ground

    40 g sugar

    ½ teaspoon cinnamon powder

    2 tablespoons rose water

    Then proceed as shown in the photos.

    Bake in in a greased cookie sheet in a preheated oven, at 200 deg C for about 20 mtes.

    Remove, cool & sieve icing sugar on them.

    Home made Rusks - crunchy munch!!

    I made with maida, trying it for the first time! You may try the following combos:

    1 – half maida + half wheat flour

    2- fully wheat flour

    3 – 3 cups whea flour (or maida + 1 cup powdered nuts (cashew /almond / walnuts). cashew rusks very famous in a shop called Brown Tree & costs Rs 80 per kg – regular maida rusk, 25 Rs!! A few nuts can be coarsely hopped for a 'nice biting texture'!

    Knead together to a soft elastic dough:

    Maida - 4 cups

    Butter /oil - 1/3 cup

    Sugar - ¼ cup

    Salt

    Active Dry yeast - 1 tbsp (7 gms)

    Eggs - 2 ( I used egg-replacer)
    or use egg-replacer

    Cinnamon & nutmeg - ¼ tsp, each

    Hot milk - about 300 ml

    The photos are self-explanatory!!

    First make 2 long cylindrical loaves, place in a greased pan & bake in a preheated oven at 180deg C gfor 10 mtes & then on 160 deg C for 20 mtes or till done.

    Take out & cool for 5-6 hrs.

    Cut into ½ “ thick slices.

    Spread on a baking sheet & bake at 140 deg C for 25 mtes or so, till totally dry & crisp.
    Do this in 2 batches.

    Pizza Hearts - pizza parade is starting!!

    For this recipe, make a crisp crust!!

    For small quantities, I prefer to use fresh yeast.

    Make a dough with

    Wheat flour - 1 cup

    Fresh yeast - 1 tsp

    Butter - 1 tsp

    Sugar - 1 tsp

    Salt

    Warm milk – as necessary

    Make a soft dough, knead well & allow to prove.

    Once proved, make 2 balls & roll.

    Cut with a heart shaped cutter.

    Do not prove again; prick all over with a fork & bake at 180 deg C for about 15-20 mtes till golden. Remove & cool.

    Filling:

    Saute together in 1 tbsp olive oil:

    Finely chopped tomatoes & tricolor peppers, each 2 tbsp

    Pizza seasoning - 1 tsp (or oregano)

    Red chilli powder, salt & sugar

    When cooked well, add 1 tbsp tomato ketchup & switch off.

    Cool & spread on the hearts, sprinkle pizza cheese over it.

    Bake at 180 deg C for 5-7mtes, till cheese melts.

    Strawberry – Coconut Cookies - looks great, tastes delicious!

    Mix together

    Sugar - 50 gms

    Strawberry essence - ½ tsp

    Pink colour - 2-3 drops.

    keep this pink sugar ready for rolling the cookies in it.

    Beat together thoroughly:

    soft butter - 50 gms

    Icing sugar - 50 gms

    Next add

    Coconut powder - 40 gms

    Maida - ¾ cup + baking powder - 1/8 tsp

    Strawberry essence - ½ tsp

    Milk - just about 1-2 tbsp to get a soft dough.

    Make a long roll, cut into ½ “ wide pieces , roll in coloured sugar, flatten & mark with knife or fork.

    Bake in a pre heatd oven at 180 deg C for 20 mtes or till done.

    Cool & store airtight.

    Calzone - a pizza in great demand!!

    It is a folded Italian pizza which, by the sheer nature of its shape, is far more portable than a normal pizza .

    It is generally made in a crescent shape, but I tried in a round shape.

    Since I tried with 1 cup maida, my proportion is:

    Maida – 1 cup

    Fresh yeast - 1 tsp

    Salt & sugar

    Butter - 1 tsp

    Warm milk to bind.

    Knead to a soft dough & allow to prove.

    The filling can be any pizza filling of your choice.

    After cutting the necessary shape & keeping grated cheese inside, folds & press with a fork,

    Allow to prove a second time & bake in a preheated oven at 180 deg C for 15-20 mtes.

    Remove, col & poke a hole in the cntre. Fill as much as you can.

    Garnish with grated processed cheese & serve.
