I tried this recipe the other night and it came out well so thought I would pass it on. Gnocchi are normally a bit difficult to get right but this was very easy and tasty. They are normally served with an Italian tomato sauce but I think you could serve with lots of sauces or gravies. 1 c. (8 oz.) ricotta cheese 2 eggs 1 tsp salt 1 tsp black pepper 1 c flour You mix all this together to a soft dough but not sticky. Add enough flour to get to that consistency. Divide in three and roll out three ropes about 1/2 inch in diameter and cut pieces about 1/2 inch long. Boil these in a pot of salted boiling water for about 5 minutes (taste one to see if done..if not boil a little longer). They float when they are done and they are heavy but not doughy. Drain and serve as desired.
Thanks for the recipe. sounds easy. let me try it next weekend and let you know. Bye now.:hiya:hiya:hiya:hiya CL
