Easy Ricotta Gnocchi recipe

    I tried this recipe the other night and it came out well so thought I would pass it on. Gnocchi are normally a bit difficult to get right but this was very easy and tasty. They are normally served with an Italian tomato sauce but I think you could serve with lots of sauces or gravies.

    1 c. (8 oz.) ricotta cheese
    2 eggs
    1 tsp salt
    1 tsp black pepper
    1 c flour

    You mix all this together to a soft dough but not sticky. Add enough flour to get to that consistency. Divide in three and roll out three ropes about 1/2 inch in diameter and cut pieces about 1/2 inch long. Boil these in a pot of salted boiling water for about 5 minutes (taste one to see if done..if not boil a little longer). They float when they are done and they are heavy but not doughy. Drain and serve as desired.
