    Hello everyone,

    I am looking for recipes for Guguni ( like channa) and Muri ( Bhel puri) form Bengal. I couldn't find it anywhere. Please help me.

    CL Dear,
    It appears you spent some time in your life in Bengal, right? Anyway, I can tell you the way I make ghugni (this is the way they pronounce it).

    Ghugni:

    Soak the matar over night. Pressure cook it (with adding little salt). Strain the water and keep it aside. (the pressure cooking should not make the matar too soft).

    Heat a tawa or a kadhai, heat and light fry panchphutan, cinnamon, 1/2 cloves and 1/2 cardamom. elaichi. Cool it down and grind it finely.

    In a kadhai, heat little oil (not much). When the oil is moderately heated add little pieces of dalchini [​IMG] and if you want tejpatta [​IMG].

    To this add the boiled matar. Add turmeric powder and salt to taste. May add little water and cover it and put it in low burner for sometime. At the end, add a little sugar and stir it.

    Add the fried masala to it after removing from the oven. Add to it grated coconut.

    While serving, you can add 1/2 drops of lime juice. That's it ! It's ready! (People add grated onion also, i do not prefer it that way).

    Bhel Puri:

    To muri, add few drops of oil, ononion, coriander leaves chopped, tamarind chatni, that friesd masala (mentioned it previous recipe), paprri, boiled chana (small ones), grated coconut, cucumber, tomato and mix them together. Can add slices of coconut while serving. Add a little salt to taste. (I have not tried it at home. But seen those guys making at the road side stalls)...

    Thanks. You are right. I lived in Calcutta only for few years. But ate the stuff at the road side. You must e form Calcutta. Are you aware there is Kolkatta Tamil group in Facebook. ( assuming you are Tamilian).

    I read your profile. Tagore songs??? Can you recommend me some?

    I will try to mae it. First i nee to look for punchpuran recipe. This week will make and let you know about the Guguni.

    Panchphutan is just a mixture of these seeds (attaching pics as i do not know the English names appropriately)

    1. plain Jeera [​IMG]

    2. coriander [​IMG]

    3. black jeera [​IMG]
    4. mustard seed

    5. saunf [​IMG]

    6. Methi [​IMG]

    7. ajoyan (optional) [​IMG]



    One thing I forgot in the previous recipe - that is u need to add little ginger paste in the mildly heated oil, before adding the boiled matar to it.
