Fettuccine with spinach sauce

    Hey all

    I dont know if this is the right sub-forum to post this italian dish. But this has a perfect twist to suit indian kitchen. This pretty pasta dish is a perfect main course dish for veggie meal. Use any pasta if fettuccine is not available. Penne pasta might go well too

    Ingredients
    150 gms of fettuccine pasta (cook as per instructions in the packet)
    Spinach - 200 grams
    Vegetables : 3/4 cup (i used capsicum, onion and tomato cut into 1 inch stripes)
    Tofu : 50 grams
    Garlic : 3 cloves
    Sour cream - 1/4 Pint
    Parmasean cheese : about 2 Tbsp
    Italian Seasoning : 1 Tsp
    Oregano : 1/4 Tsp
    Olive Oil : 2 Tbsp
    Chopped Onion : 3 Tbsp
    Chilli Flakes : 2 Tsp
    Hearts of artichoke : 1 Tbsp (optional)

    Procedure

    Spinach sauce
    1. Heat 1 Tbsp of oil in saucepan, add garlic and Onion and fry until onion turns brown. To this mixture add chopped spinach and cook until spinach wilts.

    2. Place spinach in mixer. Add cream, parmasean cheese, Italian seasoning, 1 Tsp of chilli flakes,salt and blend until smooth. Set aside

    3. In a larger saucepan, add 1 Tbsp of oil. Add chopped garlic, Italian seasoning and oregano. Turn on the heat now and fry till aroma. Add vegetables, tofu and chilli flake and toss in high heat for 2 minutes.

    4. Now add pasta, hearts of artichoke and spinach sauce. Cook for 5-6 minutes in medium heat.

    5. Top off with grated cheese and relish

    Though I see this recipe after a long time of you posting it, I amm glad that I did it atleast now.
