    Lemon Glazed Bread (1) - full of nuts; ideal for a special breakfast or high tea!!

    Butter - ½ cup (can substitute hydrogenated fat)

    Sugar - 1 cup

    Eggs - 2, slightly beaten / I usedegg-substitute

    Sifted flour - 1 ¼ cups ( can use wheat flour)

    Baking powder - 1 tsp

    Salt - ½ tsp

    Milk - ½ cup

    finely chopped nuts - ½ cup

    Grated peel of one lemon

    For frosting:

    Juice of 1 lemon + ¼ cup of sugar

    Cream butter with sugar & mix in eggs / substitutes.

    Sift flour with baking powder + salt.

    Alternately add the flour mixture & milk to the first mixture, stirring constantly.

    Mix in nuts & lemon peel.

    Bake in a greased 9” * 5” loaf pan at 160 C for one hour, till completely done.

    You can bake in a square, rectangular or round tin also.

    Frosting:

    When it comes from the oven, poke a few holes in the top.

    Combine ¼ cup sugar + lime juice well over a very low flame till it slightly thickens & pour over the top.

    Allow it to percolate.

    I decorated with jujups!

    Orange-Raisin-Nut Bread - just smear a dash of butter!!

    Use the basic bread recipe – white bread or whole wheat flour bread.

    I used wheat flour fully.

    But instead of water, add warm orange juice; add

    Grated orange peel - 1 tbsp

    Seedless raisins - 1 cup

    Chopped walnuts - ½ cup

    I baked at 220 deg C for 10 mtes & 180 deg C for 20-25 mtes, till done.

    Orange-Date-Nut Bread - Merry X’mas!

    Maida – 250 grams

    Baking powder – 1 tsp

    Baking soda – ½ tsp

    Salt – ½ tsp

    Powdered Sugar – 120 grams

    Egg -1 (How to replace eggs with flaxseed powder?)

    Grated orange Peel – 3 tablespoons

    Orange Juice – 160ml

    Melted Butter – 3 tablespoons

    Dates/Raisins – ½ cup

    Walnuts/Pecans – ½ cup

    Sift flour with baking powder, soda, salt and sugar in a large bowl.

    Beat egg well. Stir in peel, juice and butter.

    Add liquid ingredients to the dry ingredients and stir till blended.

    Add dates/raisins and walnuts/pecans. Stir till blended.

    The mixture is slightly heavy, and is of a dropping consistency.

    Turn into a well buttered 9 by 5 inch loaf pan. Bake at 180 degrees C for 70 minutes or till the bread is done.

    Cool slightly out of pan before slicing.

    This bread is ideal for a freezer, and can be stored upto a week in the fridge. It slices well warm and cold.

    Bubble bread - pinch a bubble & eat!!

    You can use any bread recipe. I tried this in a ring tin as shown below.

    When the dough is proved, punch down & make tiny balls about 1`” in diameter.

    Melt 2 tbsp of butter & keep 2 tbsp of khus-khus ready.

    Dip top of each ball first into butter & then in poppy seeds & pile all balls in a greased ring mould, seed side up. Let rise.

    Bake in a preheated oven at 180 deg C for 25 mtes or till done.

    Unmould – likely to fall in clusters.

    Cool & serve.

    Hot Spicy Wheat Bread - with Indian masalas!

    I tried this with one portion of whole wheat bread given under freezing the dough tips.

    Bread dough - one portion.

    Roll & divide into 6 triangles.

    Apply over each triangle (to taste) on a layer of oil:

    Red chilli powder

    Jeera powder

    Minced green chillies & ginger

    Stack them one over the other & finally, gently roll into a ball.

    You can bake this in any shaped tin.

    I proved in a greased round tin & sprinkled minced green chillies & ginger along with 1 tbsp toasted oats,after spplying a little oil for these to stick.

    Prove the dough till it rises.

    Bake at 180 deg C for 25 mtes or till done.

    Remove, cool, invert & slice after complete cooling.

    One foot long Herbal bread - make it to any desired shape!!

    I tried herbal bread with typical Indian herbs as shown in the photo:

    I tried this with whole wheat bread dough.

    Pan leaves (vethalai in tamil)

    Kalpuravalli (oregano)

    Tulsi (basil)

    Pepper

    Ajwain

    Dry ginger powder to sprinkle on top.

    Add the herbs in moderation because the next day, flavor comes out quite strong!

    I minced all ingredients except dry ginger powder, which I finally sprinkled on top.

    You can mix the mince to the dough & shape it as you like.

    Bake in a pre heated oven at 180 deg C for 25 mtes or till done.
