    Waldorf Salad - here, summer is starting!!

    Diced apple - 1 ½ cups


    Diced pineapple - 1 ½ cups


    Shredded cabbage - 1 cup


    Orange segments - 1 cup


    Walnuts, halved - few


    Malai or cream - ½ cup


    Lime juice - 2 tsp


    Salt, pepper.


    You can use fresh sweet pineapple or tinned ones.


    Smear apple pieces with lime juice to prevent discolouration.

    Simple Salad - makes a meal!!

    Chopped tomatoes, cucumber, lettuce, pineapple, grapes, walnuts.
    No dressing is necessary for home use.

    Cabbage-Orange Salad - ideal for dieters.

    Toss together & chill:

    Grated green cabbage

    Grated violet cabbage

    grated carrot

    Mexican Salad - colourful, filling & delicious.

    Deep fried bread cubes

    Boiled, peeled & cubed potato (firm)

    Strips of capsicum

    Round thin slices of big onion

    Dressing:

    Mix 2 tsp vinegar+salt+sugar+1 tsp olive oil & minced garlic.

    Pour dressing over the salad & sprinkle red chilli powder.

    Rajma-Macaroni Salad - yet another meal-in-a-dish.

    Rajma, soaked overnight & boiled wth a pinch of salt - ½ cup

    Boiled macaroni - ½ cup

    Chopped carrots, pineapple, capsicum and tomato

    Dressing:

    Orange juice + lime juice + powdered sugar + mustard powder _ salt + pepper powder.

    Chill salad & dressing separately & mix when serving.

    Cucumber Raitha - my version is different!

    This goes with stuffed parathas besides rice+vathakzambu or rice+mulagootal.

    Mix together:

    Churned thick curds - 1 cup

    Finely chopped (not grated) cucumber - 3/4 cup

    salt, sugar, red chilli powder

    Garnish with:

    Coarsely powdered peanuts + chopped coriander

    Potato - Pineapple Raitha - substitutes a meal!!

    Mix together & chill:

    Boiled potato cubes - 1 cup

    Pineapple pieces - 1 cup (lightly steamed)

    Curds - 1 cup

    Coriander leaves - 2 tbsp

    Salt, chilli powder

    To temper - mustard seeds in 1/2 tsp oil (optional)

    Red Pumpkin Raita - with sev ‘thrown in’!

    Finely chopped kaddu/red pumpkin - 1 cup

    Fresh curds - 1 cup

    Thick coconut milk - 2 tbsp ( for a nice flavor)optional, ocourse!

    Amchur powder, black salt, red chilli powder, salt

    Sev - to garnish

    Steam kaddu pieces & cool.

    Mix with all other ingredients,chill & serve.

    Mango-Ginger-Garlic Pachadi - Call this a chutney as well!

    Of late, this has become my favourite! :biggrin2:
    This has a sweet & sour taste & goes well with all tiffins, specially idli/dosai.

    Select a mango which is not very sour, but just medum or sligt;y sour. Deskin & chop into small slices. For sweetness, use jaggery/sugar. I used the former.

    Chopped mango - 1 cup

    Sugar/jiggery - 2-3 tbsp or to taste

    Red chillies - 2-3

    Ginger - 3 cms

    Garlic chopped - 3 tsp

    Salt

    To temper:

    Oil - 1 tsp

    Mustard seeds - 1 tsp

    Boil sugar/jaggery in 1 cup of water.

    When dissolved, grind red chillies+ginger+garlic, using a little of that water.

    Add mangoes, paste & salt.

    Cook till mangoes are tender & slightly mushy.

    Temper as given.

    Colourful Salad - mix & match!!

    Toss together cubes of
    Toamto - deseeded
    Pineapple
    Cucmber
    paneer

    To with plain salt & pepper.
