    Drumstick Leaves Curry - iron & fibre!

    Fresh tender drumstick leaves - 2 cups

    Chopped onions - ¾ cup

    Grated coconut - 2 tbsp

    To temper:

    Oil - 1 tbsp

    Mustard seeds - 1 tsp

    Red chillies - 2, broken to bits

    Urad dhal - 2 tsp

    In a shallow MW bowl, take oil, mustard seeds , red chillies & urad dhal.

    MW Hi for 2 mts.

    Add onions & cook for 3-4 more mts on Hi.

    Finally add leaves MW Hi for 3 mts.

    Do not add water if the greens are fresh.

    Add coconut & salt & mix thoroughly.

    MW Mango Madhuri - mango pulp & coconut combination!

    If done in MW, 2 tsp ghee is enough. If done on stove top, a little more ghee must be added to prevent sticking to the bottom.

    Mango pulp - 1 cup

    Freshly grated coconut - 1 cup

    Milk powder - ½ cup

    Sugar - 2 cups

    Cardamom powder - 1 tsp

    In a micro-bowl, take pulp & ghee.

    MW Hi for 5 mts.

    Add all other ingredients & MW Hi for 10-15 mts, till it becomes a mass.

    Stir every 4 mts to prevent overflowing.

    A tsp dropped in cold water should be able to be rolled.

    Remove, stir for sometime and empty on a greased plate.

    Cut into squares when cold.

    MW Tinda Sabji - no oil; hence low in calories!

    Onions, thinly sliced - ½ cup

    Tomatoes, sliced - 1.2 cup

    Tinda, peeled & thinly sliced - 1 cup

    Ginger garlic paste - 1 tsp

    Red chilli powder & dhaniya powder - 1 tsp, each

    Roasted jeera powder - ½ tsp

    Salt, haldi, hing

    Coriander leaves - 1 tbsp, chopped

    In a micro bowl, take onions & tomatoes.

    Cover & cook for 3 mts.

    Open, add ginger-garlic paste & MW Hi for 1 mte.

    Add spice powders & MW Hi for 1 mte.

    Add tinda slices & 2-3 tbsp of water.

    Cover & MW Hi for 5 mts, stirring once in between.

    Leave for 5 mts.

    Open add salt, mix well & garnish.

    Serve with rotis.

    MW Banana Kadubu - a South Canara Delicacy !

    I learnt this from a Konkani friend.

    Rice flour - ¾ cup

    Maida - ¼ cup

    Baking powder - ½ tsp

    One medium ripe banana – mashed

    Jaggery - ½ cup (melted with ¾ cup water & strained)

    Finely grated coconut - ½ cup

    Ghee - 2 tbsp

    Cardamom powder - ½ tsp

    Mix all ingredients & rest for 10 mts.

    MW Hi for 5 mts.

    Give a standing time of 10 mts.

    MW Yummy Chocolate Toffee - savvy & chewy!

    1 tin condensed milk

    2 cups milk

    1 heaped cup sugar

    3 tbsp white butter

    30 gms cocoa powder

    30 gms Drinking chocolate

    1/2 cup chopped cashew(optional)



    Mix all the ingredients except cashew to a homogenous mixture in a BIG Micro bowl , if necessary, with a hand beater.

    Micro Hi first for 10 mts and Micro Med for about 40-45 mts., stirring very frequently in between.
    Test by soft ball method.

    Remove add nuts. Cool ,stirring in between. Using greased hands ,roll into balls , keep in paper cups.

    Best kept refrigerated.

    MW Custard Apple Phirni - very easy to make.

    Full fat milk - 1 ½ cups

    Basmati or any thin long grained rice - 2 tbsp

    Powdered sugar - 4 tbsp

    Cardamom powder - ½ tsp

    Deseeded sitapal - ¾ cup (need not be mashed)

    Grind the rice to a fine powder in mixi.

    In a large MW bowl, combine 1 cup of milk, ground rice & mix well.

    MW on Hi for 4 mts, stirring thrice in between.

    Add remaining milk & MW on Hi for 2 more mts.

    Remove & allow to cool.

    Add sugar, cardm powder & fruit pulp.

    Mix well, chill very well & serve.

    You can grind the soaked rice fine and do this recipe.

    Artificial sweetener can be added instead of sugar.

    MW Ridgegourd Curry - healthy & delicious!!


    Select tender ridgeourd & peel off only the sharp ridges, leaving the flavour & nuitrition intact..

    Thinly slices vegetables - 2 cups

    Freshly grated coonut - 2 tbsp

    Lime juice - 1 tsp

    Coriander leaves - 2 tbsp

    Haldi, salt, sugar (optional)

    MW on Hi for 2 mtes in a micro bowl:

    Oil - 1 tbsp

    Mustard seeds - 1 tsp

    Crushed ginger+green chillies - 2 tsp

    Remove, add vegetable, haldi, salt & mix well.

    Cover with a lid & MW Hi for 5-6 mtes. This time can be less if te vegetable is very fresh.

    If it is still moist, continue to cook on medium till dry.

    Add coconut, sugar & lime juice;
    Serve hot garnished with coriander.

    Goes very well with rotis & a dhal!

    MW Healthy Churma Laddu - different &very tasty!

    Grind in a mixi good quality jaggery (gur) & use.

    Buy lapsi used for upma – as small a variety as you can get.

    Lapsi, wheat flour - ½ cup each

    Powdered jaggery - ½ - ¾ cup (can be your choice)

    Milk - 3 tbsp

    Melted ghee - 3-4 tsp

    Desiccated coconut - 1 tbsp

    White Seasame seeds - 1 tbsp

    Cardamom powder - 1 tsp

    Khs Khus - to roll the laddus

    Take lapsi & wheat flour in a MW bowl.

    Add 1 tbsp milk, mix well & MW Hi for one minte.

    Remove, add 2 tbsp milk,mix & MW Hi for 3 mtes.

    Remove, mix & powder in a mixi.

    Sieve through a rava sieve.

    Mix powdered jiggery, sesame seeds, desiccated coconut & cardamom powder.

    Add ghee in tablespoons & mix to get a dough.

    Roll into balls & roll in khus khus.

    MW Muthiyas - ideal jiffy snack!!

    This is made with white jowar flour + cabbage.

    Finely chopped cabage - 1 cup

    jowar flour - 1 cup

    Green chilli - ginger paste - 1 tbsp

    curds - just enough to bind

    Cooking soda - a pinch

    Salt & sugar

    Lime juice - 2 tsp

    seasame seeds - 2 tsp

    Oil - 2 tsp

    To temper;

    oil - 1 tbsp

    Mustard seeds - 1 tsp

    hing & curry leaves.

    Knead the ingredients to a dough & form into rolls.

    Steam on MW Hi for 6-7 mtes.

    Cool completely & cut into 1 cm slices.

    In a shallow bowl, add tempering ingredients & MW Hi for 2 mtes.

    Now add sliced muthiyas & cook on combo mode ( MW + grill) for 7-8 mtes, till lightly browned.

    You can use radish or bottlegourd or methi also.

    MW Rava Sheera - ideal Prasad for sathyanarayan puja.

    This has less sugar & least ghee


    Ghee - 1 tbsp

    Rava - ½ cup

    Miilk - 2 cups (mixed with ¼ tsp powdered saffron)

    Sugar - ½ cup

    Raisins (plumped in water) - 1 tbsp

    Cardaom powder - 1 tsp

    Sliced almond & cashews - 1 tbsp, each

    MW ghee on Hi for 1 mte.

    Remove,add rava & mix thoroughly.

    MW on medium for 4-5 mtes, stirring twice till light golden. It may take 2-3 mtes more, depending on the individual oven.

    Remove & add saffron milk, stirring to prevent lumps.

    Add sugar, raisins, nuts & mix well.

    MW on Med heat till the water dries up & the mixture is soft.

    Spread on a greased plate & garnish with saffron, raisins, badham & cashews – press lightly.

    Cool & cut. I pressed into moulds & hence this shape.
