    Saffron Honey Braid (1) - extra flavor & colour!

    Honey - 4 tbsp

    dry yeast - 7 gms

    Ground saffron - 1/8 tsp

    Wheat flour - 1 cup

    Maida - 1 ½ cups

    Vegetable oil - ¼ cup

    Salt - 1 tsp

    Golden raisins - ½ cup

    hot water

    Extra honey to brush over crust.

    Usual method for bread. Can be baked as plain loaf also.

    Bran Bread (1) - our daily bread!!

    I cannot think of a more healthy, versatile, delicious bread than this one, with the goodness of whole wheat flour+bran – oats/wheat. I find it easier to make this than roti, I admit. We can eat this with any dhal or sabji as well.

    Whole wheat flour - 2 ¼ cup

    Oats/wheat Bran - ½ cup

    Salt -- 1 tsp

    Dry yeast - 1 tbsp

    Olive oil - 2 tbsp

    Honey/molasses - 2 tbsp

    Hot water - 225 ml ( a little more or less)

    Knead as usual; but remember, this dough takes more water to be made soft. Prove the dough the first time & to make a loaf, proceed as shown below in the photos.

    Focaccia (1) - my delicious version is similar to pizza!

    Make Italian Bread dough using:

    Maida/all-purposse flour - 2 ½ cups

    Sugar - 1 tsp

    Salt - 1 tsp

    Dry yeast - 7gms

    Olive oil - 1 tbsp

    Hot water - as is necessary

    Allow the dough to rise & in the meanwhile, prepare sauce as follows:

    Tomatoes - 3, peeled, seeded & quartered

    Tomato sauce - 200 gms

    Oregano/Italian herb seasoning - 1-2 tsp

    Salt - ½ tsp

    Sugar - ¼ tsp

    Pepper - ¼ tsp

    Garlic salt - 1 tsp

    Process in Fp or blend in mixi to coarsely chop tomatoes.

    Add tomato sauce & add other ingredients.

    Again, process or blend JUST TO MIX.

    For topping:

    Grated Parmesan cheese - ¼ cup

    Olive oil - 3 tbsp

    Thin onion rings (optional)

    After the first rising of the bread dough, proceed as follows. Punch down dough.

    Roll out into a rectangle 15*11”/circular pizza tray, well greased.

    Press dough to sides of the pan & with fingers, make inendations in the dough.

    Spread sauce evenly over the dough.

    Sprinkle ¼ cup grated Parmesan cheese over sauce.

    Drizzle 3 tbsp oil over cheese & sauce.

    Let stand in a warm place until it rises well.

    Arrange onion slices decoratively.

    Bake at 230C for 12-15 mtes, until well browned at edges.

    Remove & cut into wedges.

    Serve hot.

    Alternate topping, instead of tomato sauce & cheese:

    A mixture of ½ tsp dried thyme + finely chopped onion + 1 tsp chilli flakes + salt + 2 tbsp olive oil.

    Potato Bread (1) - a very tasty bread!!

    I used potato flakes now available here. you can use boiled & mashed potatoes as well.

    Potato flakes - 2 tbsp

    Wheat flour - 1 cup\

    Maida - 1 ¾ cups

    Skimmed milk powder - ¼ cup

    Dry yeast - 1 tbsp

    Sugar - 2 tbsp

    Butter - 2 tbsp

    Salt - 1 tsp

    Eggs - 2 ( I used replacement)

    Hot water - as necessary

    Usual method as for all breads.
