    Instant Chutney - unbelievably tasty!!

    Grind together:

    Big onions - 2, chopped

    Big tomato - 1

    Red chillies - 4, 5 (or to taste)

    Salt.

    Temper in 1 tbsp oil:

    Mustard seeds - 1/2 tsp

    Urad dhal - 1 tsp

    No cooking is necessary. This goes very well with idli & dosai.

    Poha Museli - crunchy, unbelievably tasty!!

    This is power-packed & ideal for breakfast.

    Thick variety ppoha - 1 cup

    Water ( tender coconut water or coconut water, if available, adds ro taste) - 1 cup

    Freshly grated coconut

    Crushed ( not powdered) jaggery

    Grated carrot

    Cucumber , chopped to cubes

    Apple, cubed

    Dates

    Banana, sliced

    Walnuts

    A pinch of salt

    Grind poha like rava & mix with water/coconut water.

    When well soaked, add all other ingredients ( to taste) & serve fresh.

    Liquidise grated beetroot, grated ginger, orange segments & crushed ice.

    Palak Power Juice - lets’ go Popeye’s and get full force!

    This is best consumed fresh and without adding salt or sugar.

    Apple - 1 big, unpeeled, cored & chopped

    Palak (spinach) leaves - 10-12, cleaned and chopped

    Pineapple slices - 2, with skin

    Celery sticks - 1-2 wit leaves, finely chopped

    Crushed ice

    In a mixer or blender, blend all ingredients using 1 cup water.

    Strain through a fine sieve & serve topped with crushed ice.

    Apple-Date Milkshake - makes a mini-meal!!

    Soak dates in warm water for an hour. Blend with grated apple + ice cubes.
    Milk, sugar are not necessary.

    Swiss Apple Museli - ideal for breakfast.

    Fine oatmeal or rolled oats - 4 level tbsp

    Fruit juice - ¼ pint

    Apples - 4

    Cream or top of milk - 4 tbsp

    Honey - 1 tbsp

    Brown sugar - a little

    Raisins - ½ cup

    chopped nuts 1-2 tbsp

    Place oats & juice in a bowl & leave overnight.

    Next morning grate apples with skin.

    Reserve a litile for decoration and mix the rest with remaining ingredients (except nuts)
    Put into glasses, top with some grated apple and sprinkle with chopped nuts.

    Chilled Ragi Porridge - also called Aadi kooz!

    This is a cool dish for hot summer!

    This is a very old-fashioned dish, but east to prepare.
    Fermentation adds to the nuitrition value of the dish.

    Basic porridge:

    Ragi flour - ½ cup

    Water - 1 cup

    Cooked rice - 1-2 tsp

    Buttermilk - 1 cup

    Salt

    Mix flour, water & salt without lumps.

    Ferment it overnight.

    Transfer to a saucepan, cook on low heat, stirring continuously.

    It will form a sticky lump, but thoroughly cooked.

    Add cooked rice, miix & remove.

    Cool thoroughly & add buttermilk to get the desired consistency.

    Chill in the fridge.

    It can be served with:

    1 – Raw chopped small onions which help cool the system.

    2 – Fry curd chillies, sundakai & manathakkali vathal in very little oil & add.

    Banana Chips Podi - an interesting recipe!!

    One can make banana chips at home or use store bought chips.

    Chips - 100 gms

    Fry in a dry kadai:

    Jeera - 1 tsp (remove)

    & fry

    Red chillies - 3,4

    Gram, tur & moong dhals - 2 tsp, each

    Curry leaves - few

    Cool the roasted ingredients & powder cosrse with salt.

    Finally crumble the chips, add & give a run in the mixi.

    Can be eaten with hot rice + ghee or curd rice.

    Multi Flour Paratha - soft & healthy.

    Mix to a soft dough using warm water:

    1 tbsp each of

    Wheat flour

    Wheat germ

    Wheat Bran

    Jowar flour

    Makai flour

    Bajra flour

    Oats (powdered)

    Ajwain - ½ tsp

    Kasoori methi,crumbled - 1 tsp

    Salt

    Do not keep the dough for long. Roll carefully (this tends to break slightly)and make chappathis, applying oil or ghee.

    Carrot – Palak Paratha -- to lend you a variety.

    For lunch, make a dhal + vegetable;
    for breakfast or dinner serve with pickle + curds.

    Wheat flour - 1 cup

    Finely grated carrot - 1 cup

    Palak (well dried in a towel) - 2 cups

    Red chilli powder - 2 tsp

    Salt, hing, oil.

    In 2 tsp oil, sauté firs carrot & after a few mtes add palak.

    Saute on a low fire till dry.

    Cool &mix with all other ingredients to make parathas.
