    .Toffee Bars(1) - everyday bar cookies, rich flavor-moist texture!

    Cream together:

    Butter - ½ cup, softened

    Sugar - ½ cup

    Salt - a pinch

    Stir in;

    Maida - 1 cup

    Pat this into 13 by 9 by 2inches ungreased baking pan. The size of the tin can be your choice. Let the depth be just not more than 2".

    Bake at 350 deg F for 15 mtes or till lightly browned.

    Next layer:

    Stir over low heat till butter melts;:

    Sweetened condensed milk - 400 gms tin

    Butter - 2 tbsp

    Cook & stir over low heat till butter melts.

    Mixture will thicken & become smooth.

    Stir in 1 tsp vanilla.

    Spread over baked layer.

    Bake again at 350 deg F till golden for 12-15 mtes.

    Spread warm cookies with fudge frosting given below; This is optional, though very good..

    In a small saucepan, melt 1 oz unsweetened chocolate & 2 tbsp butter over low heat, stirring constantly.

    Remove from heat; stir in 1½ cups sifted powdered sugar & 1 tsp vanilla.

    Blend in about 2 tbsp hot water to get almost pouring consistency.

    Cool till set (takes 10-12hrs) & cut into bars. The size of the bar is your choice.

    Pineapple Preserve Bars (1) - rich-tasting!

    In this recipe, I substituted for egg as per

    (1 egg = 1 tbsp flaxseed powder + 3 tbsp water.
    First powder flaxseed as fine as possible & blend thoroughly with water)



    Butter – ¾ cup

    Sugar – 1 cup

    Egg – 1

    Pineapple Preserves – ½ cup

    Maida – 2 cups

    Baking Soda – 1 tsp

    Salt – ½ tsp

    Chopped Nuts – ½ cup

    Cream butter and sugar till fluffy.

    Beat in egg and preserves.

    Stir together flour, soda and salt into the creamed mixture.

    Fold in nuts.

    Spread in a 13X9X2-inch baking pan.

    Bake at 350 degrees for 30 minutes.

    Cool slightly.

    Spread with pineapple frosting.

    Cool well.

    Cut into bars.

    Pineapple frosting

    Blend ½ cup powdered sugar, 2 tablespoons soft butter and 2 tablespoons pineapple preserves till smooth.

    Add enough milk to get a spreadable consistency (abt 1 tbsp)

    Diet Cake Mix – a basic recipe!!

    This cake uses wheatflour & oil instead of maida & butter.
    I used flax seed powder replacement for eggs.
    You can use this recipe & make cake with any flavour or adding nuts, dried fruits etc.

    Wheat flour - 170 gms

    Baking powder - 2level tsp

    Powdered sugar - 150 gms

    Eggs - 3 ( or 3 tbsp flaxseed powder blended thoroughly with 9 tbsp water)

    Oil - 6 tbsp

    Vanilla essence - 1 tsp

    Milk - 2 tbsp

    Mix all the ingredients together in a food processor set at slow.

    Or blend thoroughly using a hand beater at slow speed.

    Transfer to a greased baking tin and bake at 180 deg C till done – 45 mtes or one hour.

    I flavoured with orange rind & added orange jice instead of milk.

    Chocolate cake can be made by replacing 1 tbsp of maida with 1 tbsp of cocoa.

    Diet Biscuits - are you waiting for this??

    Powdered sugar - 75 gms

    Oil - 5 tbsp

    Egg - 1

    Atta - 170 gms

    Baking powder - 1 tsp

    Mix oil & sugar.

    Beat in egg & add vanilla.

    mix in atta sifted with baking powder.

    Work in it with hand if necessary to make a smooth stiff consistency.

    If at all necessary refrigerate for 30 mtes to make it easy to roll.

    Cut out biscuits, bake in a greased tin at 180 deg for 15 mtes. I prefer to pa discs with hand.
    I tried with brown sugar & egg replacement. The first few photos show that. The last photos are with egg & sugar.

    Wheat germ-Cake mix-Spice Bars(1) - yum, yummy!

    Cake mix – 2 packages

    (How to make cake-mix at home?
    I have been using this recipe for the past 30 yrs very successfully. You can make 6 different cakes using each packet.
    I am giving my original recipe here. But now I use the FP for blending.
    Maida - 600 gms
    Powdered sugar - 600 gms
    Butter - 300 gms
    Baking powder - 30 gms
    Milk powder - 75 gms
    Cream butter till smooth.
    Add half the sugar & continue to cream.
    Mix flour, rest of the sugar, baking powder and milk powder separately. Sieve.
    Add this mixture, little at a time to the creamed shortening and sugar.
    Mix well until the mixture appears light and resembles breadcrumbs.
    Divide the mixture into 6 equal portions (270 grams each).
    Pack each portion in a ziplockbag. Seal and store tight in an airtight container in the fridge. It can be kept for 3months.)

    Mixed spice – 1tsp (garam masala)

    Oats – ½ cup

    Wheat germ – ¼ cup

    Eggs – 2

    Honey – ½ cup

    Milk – ¼ cup

    Cooking Oil – ¼ cup

    Deiccatedd Coconut – ¼ cup

    Stir the cake mix, oats, wheat germ, sugar and salt together.

    Beat eggs. Add honey, milk and oil. Mix well.

    Stir into dry mixture. Blend till moist.

    Add coconut and spread on a 15 ½ X 10 ½ X 1 –inch baking pan.

    Bake at 375 degrees for 40 mintues or till brown.

    Cool. Sift powdered sugar over. Cut into bars.
