    Orange Rolls with lemon glace icing(1) - only for fruit lovers!

    Maida/all-purpose flour - 3 American cups

    Butter - ¼ A cup

    Sugar - ¼ A cup

    Grated orange rind - 2 tbsp

    Salt - 1 tsp

    Active dry yeast - 1 package(1/4 oz-7 gms)

    Warm water - ¼ A cup

    Egg-1 (I used replacement)

    Coldmilk - 1/3 cup

    Proceed as for

    How to use Food Processor for making bread at home? (2)
    How to use Food Processor for making bread at home? (3)

    Once doubled, punch down & divide into 36 equal pieces.

    Form pieces into smooth round balls; place 3 balls in each greased muffin cup.

    Cover & let rise until doubled, about 45 mtes.

    Bake at 375F/180C for 15-20 mtes or till done.

    Remove from pan & cool on wire rack.

    Cover with lemon glace icing:



    Sieved icing sugar - 250 gms



    Lime juice - 2-3 tbsp (about)



    Put the sieved icing sugar, flavouring and water in a small pan & heat on a simmer-rest. Do not make the icing too hot.I t should look glossy & coat the back of a spoon evenly. Use at once.

    Pour on the rolls. Cool & use.

    Makes 1 doz rolls.

    Ragi Casserole Sour Bread - my innovation!

    In south tamil nadu, the combination of ragi + sour buttermilk + roasted curd chillies is very popular. I tried this as a casserole bread with yeast and it came out very well, porous and spicy.
    I sauted curd chillies in 2 tsp oil, crushed & added.
    We can also add, finely chopped onons+green chillies, sauted in oil.That gives a very good taste.
    But this is a heavy bread and hence I baked in casserole.

    Besides this, I will post a plain ragi bread also.
    All measure are American cups (250 ml)

    Ragi flour - 1 cup

    Maida - 1 3/4 cups

    Dry yeast - 7 gms/1/4 oz/1 level tbsp

    Salt - 1.5 tsp (for curd cillies) & a little more for onions+green chillies

    Sugar - 1 tbsp

    Hot water - 1/4 cup

    Sour buttermilk - 180-200 ml (varies with ragi flour)

    Oil - 3 tbsp

    Crushed curd chillies - to taste.

    The method is as for bread.

    Sauted curd chillies:

    Simple Ragi Bread - ideal for breakfast!

    Warm water - 125-180 ml

    Sugar - 2 tbsp (30 ml)

    Active dry yeast - 7 gms (one package of ¼ oz)

    Maida/all purpose flour - 1.5 American cups(375 ml)

    Ragi flour - 1 American cup (250 ml)

    Skimmed milk powder - ¼ A cup (60 ml)

    Vegetable oil - 15 ml (1 tbsp)

    Salt - 1 tsp 95 ml)

    The recipe os the same as for:

    Whole wheat flour Bread
    I sprinkled some flax seeds!
    The dough has doubled.

    Bread Basket(1) - enticing array of bread rolls!

    The following is a basic recipe for small bread rolls.
    Egg is optional.
    You can make fully with maida/all-purpose flour.
    All measures re American cups.

    The regular recipe uses wholly all-purpose flour/maida. BUT, I substituted, using 1 cup whole wheat flour. All measurements are with American cups (250 ml).
    Warm water (105-115F/41-46C) - 125-180 ml
    Sugar - 3 tbsp
    Active dry yeast - ¼ oz or 7 gms
    All purpose flour/maida - 2 ¾ cups (I used 1 cup whole wheat flour in that).
    Skimmed milk powder - 3 tbsp
    Cold butter, cut into 3 pieces - 3 tbsp
    salt - 1 tsp
    beaten egg - 1
    Melted butter or vegetable oil
    Procedure is the same, as for

    Parkerhouse Rolls - Dinner Roll Classic in the United States (1)

    [Use
    Basic Dough for Bread Rolls (1)
    cut into 2" squares.
    Brush with melted butter
    Make a off-centre crease in each piece. Fold in half, so that the top overlaps slightly. ( Large half folds over small half)
    Place point down on a greased baking sheet.
    Let rise and bake. Makes 3-4 dozens
